Creamy Tofu Pasta
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, chopped fine
- 14 cup finely chopped red onion
- 1 (32 ounce) package soft tofu
- 12 cup water
- 3 12 tablespoons tamari or 3 12 tablespoons light soy sauce
- 1 12 teaspoons dried sweet basil leaves
- 2 cups hot cooked pasta
- 14 cup chopped fresh parsley
- Heat the olive oil in a small pan.
- Add garlic and onion and saute over medium-low heat until the onion is translucent.
- In food processor, blend the tofu until it reaches a uniform consistency.
- Pour the blended tofu into saute pan with the garlic and onion, and cook for 5 minutes over medium heat.
- Add water, tamari, and basil to the pan and cook for 5 minutes more.
- Pour the tofu sauce over cooked pasta.
- Toss well and sprinkle with parsley.
- Serve immediately.
