Chewy Chocolate Chip Cookies
- 1 12 cups all-purpose flour
- 12 cup oat flour, plus
- 2 tablespoons oat flour
- 2 tablespoons wheat gluten
- 12 teaspoon baking soda
- 1 teaspoon salt
- 34 cup butter (melted, cooled - 1 1/2 sticks)
- 12 cup granulated sugar
- 1 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- 1 large egg
- 1 egg yolk
- 1 (12 ounce) package semisweet chocolate morsels
- Mix butter and sugars until thoroughly combined.
- Beat in egg, yolk and vanilla until combined.
- Add dry ingredients and mix thoroughly.
- Stir in chips.
- Roll dough into log and cut into 1/4 cup discs.
- Refrigerate till very firm.
- Bake on Silpat silicone baking sheet liners at 325 for 21 minutes or until cookies are light golden brown and outer edges start to harden yet centers are still soft and puffy.
- Do NOT overbake!
- Cookies will appear to be underbaked when removed from the oven.
- Cool cookies on silpat sheets until cool.
- Store in air tight container.
