Blueberry Muffins Recipe
- 1 1/4 c. sugar
- 2 Large eggs
- 1/2 c. lowfat milk
- 1/2 teaspoon salt
- 2 teaspoon sugar for top of muffins
- 1/2 c. butter
- 2 1/2 c. blueberries
- 2 c. flour
- 2 teaspoon baking pwdr
- Heat butter and add in sugar, stir till fluffy.
- Add in Large eggs, lowfat milk and rest of ingredients, except blueberries; mix well.
- Fold in berries.
- Line muffin pan with paper liners and fill liners to the top with mix.
- Sprinkle with sugar.
- Bake at 375 degrees for 30 min.
- You can substitute berries with any fresh fruit or possibly banana or possibly apples as you wish.
