Alu Matar (Potatoes And Peas) Flavors Of Indi Recipe
- 1 1/2 c. Peas
- 2 lrg Potatoes, 1/2 inch cubes
- 1 c. Minced tomato
- 2 x Cloves chopped garlic
- 1/2 c. Onion, minced
- 4 Tbsp. Oil
- 1 tsp Salt
- 1/4 tsp Garam masala
- 1/4 tsp Tumeric
- 1/4 tsp Grnd coriander
- 1 c. Water
- 1/4 tsp Cayenne
- In heavy frying pan, heat oil over low heat.
- Add in onion and garlic and cook until light brown.
- Add in tomato and all spices except cayenne.
- Cook for 5 minutes, continually stirring to create a well blended sauce.
- Add in potatoes and stir for a minute to cover with sauce.
- Add in water and cook covered over med.
- heat for 10 minutes.
- Remove cover and add in peas.
- Lower heat and cook another 15 minutes.
- At the end, both vegetables should be done but not too soft or possibly mushy.
- Taste for seasoning and add in cayenne for desired hotness.
