Alu Matar (Potatoes And Peas) Flavors Of Indi Recipe

  1. In heavy frying pan, heat oil over low heat.
  2. Add in onion and garlic and cook until light brown.
  3. Add in tomato and all spices except cayenne.
  4. Cook for 5 minutes, continually stirring to create a well blended sauce.
  5. Add in potatoes and stir for a minute to cover with sauce.
  6. Add in water and cook covered over med.
  7. heat for 10 minutes.
  8. Remove cover and add in peas.
  9. Lower heat and cook another 15 minutes.
  10. At the end, both vegetables should be done but not too soft or possibly mushy.
  11. Taste for seasoning and add in cayenne for desired hotness.
