Our Famous JELL-O Poke Cake
- 1 pkg (2-layer size) white cake mix
- 2 pkg (85 g each) Jell-O Orange Jelly Powder (or any other flavour)
- 2 cups boiling water
- 1 tub (1 L) Cool Whip Whipped Topping, thawed and divided
- PREPARE and bake cake mix as directed on package.
- Cool in pans for 15 minutes.
- Set aside, do not remove from pans.
- DISSOLVE jelly powder in boiling water, stirring until no powder remains.
- POKE cake layers all over tops with a large fork or wooden skewer.
- Pour half the jelly over each cake layer in pan.
- Chill for 4 hours.
- UNMOULD one cake layer, round side down, onto serving plate.
- Spread with 1 cup (250 mL) whipped topping.
- Place second cake layer on top, round side up.
- Frost top and sides of cake with remaining whipped topping.
- Garnish as desired.
- CHILL for at least 1 hour before serving.
- Can be made a day ahead and stored in refrigerator.
