Salmon Cakes
- 7 1/2 ounces salmon, canned drained, rinsed
- 4 1/2 ounces coleslaw
- 38 cup bread crumbs plus 2 tablespoons
- 1 1/2 each eggs
- 3 tablespoons cilantro chopped
- 1 1/2 tablespoons mayonnaise imitation (low-fat)
- 1 tablespoon prepared mustard
- 1 pinch black pepper
- 6 each bread, dinner rolls
- In medium bowl, combine all ingredients except rolls; blend with fork.
- Divide into four 13 cup portions and shape each into a 1inch thick patty.
- Spray large nonstick skillet with nonstick cooking spray and place over medium high heat.
- Add patties and cook until well browned on both sides, 8 to 10 minutes.
- Serve on rolls.
