Roasted Potato and Pumpkin Salad

  1. Place potato and pumpkin on a lined baking tray and spray with oil.
  2. Bake at 200C for 25-30 minutes, or until tender.
  3. Cool slightly.
  4. Combine potatoes, pumpkin, snow peas and spring onions, then arrange on serving plates.
  5. Drizzle with dressing and sprinkle with almonds.
  6. Serve.
