Roasted Potato and Pumpkin Salad
- 800g desiree potatoes, cut into wedges
- 600g pumpkin, peeled and seeded and cut into chunks
- spray olive oil
- 150g snow peas, blanched and sliced on the diagonal
- 4 spring onions, diagonally sliced
- 1/2 KRAFT* Potato Salad Dressing
- 1/4 cup slivered almonds, toasted
- Place potato and pumpkin on a lined baking tray and spray with oil.
- Bake at 200C for 25-30 minutes, or until tender.
- Cool slightly.
- Combine potatoes, pumpkin, snow peas and spring onions, then arrange on serving plates.
- Drizzle with dressing and sprinkle with almonds.
- Serve.
