Mashed Sweet-n-Bitter Potatoes
- 2 pounds, 2 to3 large, sweet potatoes, peeled and sliced or cubed
- Salt
- 1/2 cup chicken stock
- 2 tablespoons butter
- 1/4 cup orange marmalade
- Black pepper
- A couple dashes hot sauce
- Cover potatoes with water and bring to a boil.
- Salt water and cook potatoes 12-15 minutes until tender.
- Drain the potatoes.
- Return pot to the stove and warm broth over medium heat.
- Whisk in butter and marmalade.
- Add potatoes and mash the sweet potatoes.
- Season with salt and pepper and a few dashes hot sauce.
- Serve immediately.
