Spice Cake Carrot Cookies

  1. Preheat oven to 350 degrees.
  2. Place shredded carrots in a food processor and pulse until completely grated.
  3. Set aside.
  4. In a large mixing bowl, combine all wet ingredients and mix well.
  5. Put cake mix, nuts and raisins in a very large bowl and add wet ingredients and carrots.
  6. Drop by the tablespoon onto an ungreased cookie sheet.
  7. Bake for approximately 12 minutes.
  8. Remove from oven and allow to cool on cookie sheet for 5 minutes.
  9. Transfer to wire rack to cool completely.
