Super Fast Pad Thai
- 7 ounces rice noodles
- 5 ounces frozen peas
- 7 ounces frozen shrimp
- 2 tablespoons sunflower oil
- 4 ounces bean sprouts
- 4 scallions, sliced
- 2 eggs, beaten
- 3 tablespoons roasted peanuts
- 2 tablespoons soy sauce
- 2 tablespoons sweet chili sauce
- 1 ounce cilantro, leaves only
- Bring a pan of water to the boil, add the noodles and cook for 3 mins, adding the peas and shrimp for the final minute.
- Drain and set aside while you heat the oil in a large frying pan.
- Fry the noodles, shrimp, peas, beansprouts and scallions, tossing to coat in the oil for a few minutes.
- Push everything to one side of the pan and pour in the egg.
- Stir until cooked, then mix everything well.
- Toss through the peanuts, soy and sweet chili sauce so everything is combined.
- Scatter with the cilantro leaves and serve.
