Cabbage and Smoked sausage
- 2 packages beef smoked sausage
- 1 head cabbage
- 2 bunch green onion
- 1 lb carrots
- 5 medium potatoes
- 1/2 cup butter
- melt butter in a dutch oven or soup pot.
- Chop green onion (no bulb) and saute in butter.Chop cabbage in 1-2" pieces add to pot.
- Follow with cut sliced carrots and potatoes.
- Simmer until carrots and potatoes are tender.30-45 minutes.
- Add sliced smoked sausage and simmer for an additional 10-15 minutes.
- this can be halved.
- but it is excellent the next day .
- makes enough for 8-10 servings.
