Cabbage and Smoked sausage

  1. melt butter in a dutch oven or soup pot.
  2. Chop green onion (no bulb) and saute in butter.Chop cabbage in 1-2" pieces add to pot.
  3. Follow with cut sliced carrots and potatoes.
  4. Simmer until carrots and potatoes are tender.30-45 minutes.
  5. Add sliced smoked sausage and simmer for an additional 10-15 minutes.
  6. this can be halved.
  7. but it is excellent the next day .
  8. makes enough for 8-10 servings.
