Tortellini with Peas and Ricotta

  1. Cook tortellini according to package instructions.
  2. Dice onion.
  3. Cook onion with olive oil until tender.
  4. Add marinara and peas to the pan and cover.
  5. Reduce heat and simmer sauce for 8 minutes.
  6. Grate cheese while sauce is cooking.
  7. Drain pasta and stir into sauce.
  8. Serve with a dollop of ricotta on top and a sprinkle of parmesan cheese.
