Pineapple Chicken

  1. Chop onion into a large dice.
  2. Cut the dates finely, set aside.
  3. In a frying pan on high heat cook onions, raisins, and water.
  4. Cut chicken into bite size pieces.
  5. When the water has mostly evaporated add the chicken cook for a couple minutes.
  6. Add a couple tablespoons of water to pan - this will "deglaze" the pan.
  7. Add the salt, lemon juice, and dates.
  8. Add the pineapple and juice.
  9. Lower to medium heat and cook for a couple more minutes to make sure chicken is cooked through.
  10. If necessary add a bit more pineapple juice or water.
  11. Serve warm.
