Pineapple Chicken
- 12 onion
- 13 cup raisins
- 23 cup water
- 1 boneless skinless chicken breast
- 12 teaspoon sea salt
- 1 teaspoon lemon juice
- 12 cup cashews, roasted salted
- 2 dates, finely chopped
- 12 cup fresh pineapple, and juice
- Chop onion into a large dice.
- Cut the dates finely, set aside.
- In a frying pan on high heat cook onions, raisins, and water.
- Cut chicken into bite size pieces.
- When the water has mostly evaporated add the chicken cook for a couple minutes.
- Add a couple tablespoons of water to pan - this will "deglaze" the pan.
- Add the salt, lemon juice, and dates.
- Add the pineapple and juice.
- Lower to medium heat and cook for a couple more minutes to make sure chicken is cooked through.
- If necessary add a bit more pineapple juice or water.
- Serve warm.
