Chicken Broth in the Slow Cooker
- 1 whole Chicken Carcass
- 8 cups Cold Water
- 1 whole Large Onion, Chopped
- 4 whole Carrots, Chopped
- 3 stalks Celery, Chopped
- 1/4 cups Vinegar Or Lemon Juice
- 2 teaspoons Unrefined Sea Salt
- 1 bunch Parsley (optional)
- Place chicken carcass in slow cooker and add enough cold water to cover.
- Add onions, carrots, celery, and vinegar.
- Stir.
- Let sit for 30 minutes.
- Add salt and turn crockpot to Low.
- Simmer broth for at least 6 and up to 48 hours.
- 10 minutes before cooking time is up, add a bunch of parsley.
- Taste and adjust salt if necessary.
- Allow broth to cool until warm.
- Strain into storage containers.
- Refrigerate or freeze.
