Apple Walnut Brown Rice Stuffing / Dressing

  1. Rinse the rice in a fine colander and let drain for 15 minutes.
  2. Peel and chop the apples.
  3. Slice the celery thin and mince the onion.
  4. Lightly toast the walnuts in a dry frying pan on medium low heat (be careful not to burn!)
  5. then crush.
  6. Melt butter in a heavy sauce pan or pot.
  7. Saute the onions until soft (about 5 minutes), then add the celery, apples, sage, rosemary and bit of salt & pepper.
  8. Saute until the apples are tender.
  9. Pour the rice in the pot and mix it with the other ingredients.
  10. Add the broth and bring to a boil.
  11. Cover and turn to low heat.
  12. Let cook for 45 minutes or until broth is absorbed.
  13. Stop the heat and let it sit with the lid on for 15 minutes.
  14. Remove lid and lightly stir to fluff everything up.
  15. Garnish with some fresh parsley.
  16. Enjoy along side roast chicken, turkey, or pork!
