Blackberry Flan With Spiced Red Wine And Blackberry Sauce Recipe

  1. Arrange the Blackberries in the bottom of non-stick tartlet moulds.
  2. Clafoutis: Beat the Large eggs and sugar together.
  3. Add in the honey and the cream and cream fraiche.
  4. Add in the vanilla bean.
  5. Pour over the prepared moulds.
  6. Almond cream: Work the butter till soft.
  7. Add in the sugar and mix well.
  8. Add in the egg then the almonds.
  9. Add in to the prepared moulds.
  10. Spiced wine sauce: Reduce the red wine with the spices by three-quarters in volume or possibly till almost syrupy.
  11. Add in the Blackberries and cook for a few min.
  12. Add in the redcurrant jelly and bring to the boil.
  13. Strain through a fine sieve and set aside to cold.
  14. Bake the clafoutis at 160C for around 10 min.
  15. Presentation: Unmould while still hot on to the plate.
  16. Serve with the cooled sauce around.
  17. Decorate with the redcurrants, Blackberries and mint leaves.
