Vegan Pumpkin Spice Granola
- 1- 1/2 teaspoon Cinnamon
- 1/2 teaspoons Ground Ginger
- 1/4 teaspoons Ground Nutmeg
- 1/4 teaspoons Ground Cloves
- 2 cups Oats
- 1 cup Rice Crisp Cereal
- 1/2 cups Chopped Walnuts
- 1/4 cups Pumpkin Seeds
- 2 Tablespoons Chia Seeds
- 1 pinch Salt
- 13 cups Coconut Oil
- 13 cups Maple Syrup
- Preheat oven to 300 degrees F, and line a baking sheet with parchment paper.
- Start by making pumpkin spice.
- Mix cinnamon, ginger, nutmeg, and cloves together is a small jar; set aside.
- In a large bowl, mix oats, rice cereal, nuts, seeds, and salt together.
- Add the pumpkin spice mix and combine.
- Add coconut oil and maple syrup and stir everything until well combined.
- Spread granola onto your baking sheet.
- Bake for 40 minutes, or until golden brown.
