Buttermilk Polenta Bread
- 1 stick butter (melted)
- 1/2 cup honey
- 2 eggs
- 1 cup buttermilk
- 1 cup polenta (or coarse cornmeal)
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Preheat oven to 375.
- Combine dry and fluid ingredients separately and mix well, then put it all together in a bowl and mix until fully blended.
- Pour batter into a greased baking dish.
- This recipe will fit into an 8x8" dish.
- Bake 40 minutes or until a toothpick inserted into the center comes out clean.
