Jerked Pork Loin

  1. Combine ingredients except pork; mix well.
  2. Place pork in container with a cover, add marinade.
  3. Rub into the meat.
  4. Cover; refrigerate 24 hours.
  5. Remove from marinade and pat dry.
  6. Heat oven to 350 degrees F.
  7. Place pork in roasting pan.
  8. Roast about 1 hour until meat themometer reaches 160 degrees F.
  9. Let roast stand 20 minutes before slicing.
