Vegan Carrot Spice Muffins

  1. Preheat oven to 400F (200C).
  2. Spray a muffin pan with non-stick spray or you can use fancy muffin tin liners...much easier clean up, but if you're going to sit and watch romcoms and eat the majority of them like I do, why waste the liners.
  3. Mix together all dry ingredients in a large bowl.
  4. In a smaller bowl, combine the liquid ingredients.
  5. Add the liquid to the dry and mix just long enough to combine, it is true if you mix the batter crazy style they will be tuff.
  6. Add the carrots and nuts!
  7. Spoon the batter into the muffin cups, I filled mine right to the brimits a super thick batter.
  8. Bake for 15 to 18 minutes until a toothpick comes out clean.
  9. Any man coming home to the smell of these in the oven who doesnt kiss your feet immediately has issues.
  10. These tasty bad boys freeze like beautys.
