Whole Wheat Paprika Baked Fish Sticks
- 1 Egg
- 1/2 cups Milk (I Used Fat Free)
- 2 Tablespoons Dijon Mustard
- 1 teaspoon Pepper
- 1 pound Cod, Cut In Bit Sized Chunks Or Strips
- 1 cup Whole Wheat Bread Crumbs
- 1/2 cups Panko Bread Crumbs
- 1 Tablespoon Smoked Paprika
- 1 teaspoon EACH: Garlic Powder, Pepper, Garlic Salt
- Homemade Tarter & Homemade Cocktail Sauce For Serving
- Lemon Wedges For Serving

- Preheat oven to 450 degrees F. Line a baking sheet with foil, and place a cooling rack on top of sheet.
- Set aside.

- In a medium sized shallow bowl whisk to combine egg, milk, Dijon mustard, and pepper.
- Set aside.

- In a second medium shallow bowl combine bread crumbs, panko bread crumbs, paprika, garlic powder, pepper, and garlic salt.
- Stir and set aside.
- 4.
- Dip the fish into egg mixture, then coat completely in bread crumb mixture.
- Carefully place on cooling rack.
- Continue with remaining pieces.
- Spray the top with olive oil cooking spray.
- Bake for 7 minutes, flip over, spray with cooking spray, and bake an additional 5 minutes or until fish is crispy and cooked through.
- Turn on broiler the last 2 minutes of cooking if desired.
- Serve with homemade cocktail and tarter sauce, and lemon wedges!
