Grilled Lamb Medallions

  1. Pour 1/3 cup dressing over meat in shallow dish; turn to evenly coat meat with dressing.
  2. Refrigerate 3 hours to marinate.
  3. Heat greased barbecue to medium-high heat.
  4. Remove meat from marinade; discard marinade.
  5. Season meat with pepper.
  6. Grill 8 to 10 min.
  7. on each side or until done (160 degrees F).
  8. Toss salad greens with cucumbers, olives and remaining dressing in large bowl; top with meat.
