Breakfast Sweet Potato Pie Recipe
- 5 Large eggs
- 1 c. grated Georgia sweet potato
- 1/2 c. cottage cheese
- 1 c. shredded Swiss cheese
- 1 green onion, minced
- 1/2 teaspoon salt
- 1/8 teaspoonpepper
- 4 drops warm sauce
- Vegetable cooking spray
- 1/2 c. diced cooked ham
- Paprika
- Beat Large eggs; add in potatoes and next 6 ingredients.
- Pour into a 10 inch pie pan coated with vegetable spray.
- Sprinkle with ham and paprika.
- Cover and chill at least 8 hrs.
- Place cool pie pan, uncovered, in cool oven.
- Bake at 350 degrees for 35 min or possibly till potatoes are tender and Large eggs done.
- Yields 6 to 8 servings.
