Zucchini Carrot Cake
- 2 eggs
- 1 cup sugar
- 13 cup vegetable oil
- 13 cup applesauce
- 12 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 14 cups flour
- 1 cup peeled grated raw zucchini
- 1 cup grated raw carrot
- Beat eggs and sugar until frothy.
- Gradually add oil and applesauce and beat.
- Add dry ingredients.
- Beat at high speed 4 minutes.
- Stir in carrots and zucchini.
- Pour in greased 9 x 13 inch pan.
- Bake at 350 degrees for 35 minutes.
- Cool.
