Basic Easy Biscotti Recipe
- 12 cup butter, softened (1 stick)
- 34 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 teaspoon orange zest
- 2 14 cups all-purpose flour
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- ground cloves (1/2-1 tsp, depending on taste...on the lower side if freshly ground)
- cinnamon (1/4-1/2 tsp)
- nutmeg (1/4 tsp)
- Preheat oven to 350.
- Beat butter and sugar until light and fluffy.
- Add eggs, vanilla and zest and mix well.
- In a separate bowl, whisk lightly flour, baking powder and salt.
- Whisk in spices.
- Stir dry ingredients gradually into butter mixture.
- Will be sticky and vaguely crumbly.
- Mix in fruit and nut mix-ins.
- Gently knead slightly on parchment or lightly floured work surface to bring dough together.
- Split in half and form two logs on a parchment covered baking sheet.
- Logs should be approx 1" high, 3-4" wide, and 10" long.
- Bake at 350 for 30 min until golden.
- Move to cooling rack for 10 min, until cool enough to touch.
- Reduce oven temp to 300.
- Using a very sharp knife, slice into 3/8" slices.
- Return slices to cookie sheet, on sides.
- Return to oven for 15-20 min until drier.
- Cool on rack completely before storing.
- Store in air tight container for up to 3 weeks.
