Portuguese Savory Cheese Loaf (Bolo De Queijos)

  1. Preheat the oven to 350C (180 degrees C).
  2. Line a 4-by-8-inch rectangular loaf pan with parchment paper and set aside.
  3. In the bowl of an electric mixer, beat the eggs on medium until thick and lemon yellow, about 3 to 5 minutes.
  4. Add the milk, olive oil, herbs, and pepper and mix until combined.
  5. In a small bowl, sift the flour and baking powder together.
  6. Add the Queijo Sao Jorge and feta and toss to coat.
  7. Fold the flour-and-cheese mixture into the egg mixture until no traces of flour can be seen.
  8. Add a bit more milk if the dough appears dry.
  9. Fold in the presunto.
  10. Spoon the batter into the pan and smooth the top with a spatula.
  11. Bake for 40 minutes or until golden brown.
  12. Remove to a rack and let cool in the pan until just warm to the touch before turning out.
  13. Serve warm or at room temperature.
