Bacon, egg and cheese boats
- 4 small baguette
- 8 large eggs
- 1/4 cup heavy cream
- 1/2 lb thick cut bacon
- 1/4 cup chives
- pinch salt and pepper
- 1 cup gruyere (shredded)
- Preheat oven to 350
- In a saute pan over medium high heat, cook the bacon until crispy
- Make a V-cut along the center of each baguette, leave aboit 1/2 inch on the bottom.
- Scoop out the rest of the bread and place on baking sheet
- In a large bowl whisk together the eggs, heavy cream, Gruyere, chives and bacon
- Season with salt and pepper.
- Pour the egg mixture into baguette and place in the oven
- Bake for 20 minutes or until the eggs are puffy and slightly moist in the middle.
- Cut each baguette in half and enjoy.
