Boerevors Recipe
- 2 kg Prime beef
- 1 kg Pork
- 20 gm Coriander
- 2 ml Grnd cloves
- 2 ml Grnd nutmeg
- 30 gm Fine salt
- 5 ml Freshly grnd black pepper
- 500 gm Bacon (important)
- 100 ml Vinegar
- 90 gm Intestinal casing (Pork is better)
- To prepare coriander: 15ml produces 5ml Place in dry pan, heat and stir till light brown.
- Grind, sieve to remove husk.
- Grind remainder to a fine pwdr.
- Cut meat into 50mm blocks.
- Fold in with herbs.
- Mince pork beef and herb mix.
- Not too fine.
- Cut bacon into small blocks.
- Add in vinegar and bacon to chopped meat and mix.
- Stuff casing with mix.
- (NOT too tightly.)
