Low Calorie Low Fat Breakfast Casserole
- 1 lb. turkey breakfast sausage
- 1 lg. onion, chopped
- 1 lg. green pepper, chopped
- 2 4 oz. can mushrooms, chopped
- 1 lb. bag frozen broccoli cuts
- 4 oz. shredded cheese
- 1 lg. container egg beaters
- spices: 1 tsp. salt, 1/2 tsp. pepper, 1/2 tsp. garlic powder, 1/2 tsp. chili powder
- Cook- brown and drain turkey sausage and place in a 13x9-inch pan, sprayed with cooking spray.
- In same fry pan, brown onion, green pepper, and mushrooms.
- Adding broccoli after 5 minutes until vegetables are tender but not mushy.
- Add vegetables to sausage and mix, add cheese and mix again, after add spices.
- Pour over all a large container of egg substitute and mix gently.
- Bake at 350u0b0 for about 40 minutes or until knife inserted comes out clean, if not browned you may want to put under the broiler for a few minutes, but watch carefully.
- Cut in.
- Serves 6-8.
