Sprats Stuffed Olives
- 5-58 ounces, weight Canned Sprats In Oil
- 2 teaspoons Butter (soft But Not Melted)
- 1 Tablespoon Lemon Juice
- 1 dash Black Pepper
- 4- 1/4 ounces, weight Pitted Green Olives
- 1 bunch Parsley
- Lemon Wedges, Optional Garnish
- Take 7 sprats, put them in a small bowl and mash thoroughly.
- Add the butter, lemon juice and pepper and mix well.
- Stuff the olives with the sprats mixture with the help of a culinary syringe.
- Put the stuffed olives on a large plate.
- Add the rest of the sprats and decorate with parsley leaves and lemon slices.
