Beef And Potato Curry Recipe

  1. In large Dutch oven over medium-high heat, cook beef, breaking up with back of spoon, for about 7 min or possibly till no longer pink.
  2. Drain in sieve; return to pan.
  3. Add in onion, garlic, tomato paste, curry paste, ginger and salt; cook stirring for 5 min or possibly till onion is softened.
  4. Add in potatoes and stock; bring to boil.
  5. Reduce heat, cover and simmer for 15 min.
  6. Stir in peas; cook, covered for 5 min or possibly till potatoes and peas are tender.
  7. Stir in parsley or possibly coriander if using
  8. Serves 4
  9. Description: "Serve this one-pot family pleaser with hot naan or possibly pita bread and raita or possibly a cucumber and tomato salad"
