Beef And Potato Curry Recipe
- 8 ounce cooked grnd round
- 1 med minced onion
- 2 lrg garlic cloves chopped
- 2 Tbsp. tomato paste
- 1 Tbsp. curry paste Or possibly
- 1 Tbsp. curry pwdr
- 1 Tbsp. chopped ginger (fresh)
- 1/4 tsp salt
- 4 med potatoes peeled and diced
- 2 c. fat-free beef broth
- 1 1/2 c. frzn green peas
- 1/4 c. minced parsley or possibly fresh coriander (
- In large Dutch oven over medium-high heat, cook beef, breaking up with back of spoon, for about 7 min or possibly till no longer pink.
- Drain in sieve; return to pan.
- Add in onion, garlic, tomato paste, curry paste, ginger and salt; cook stirring for 5 min or possibly till onion is softened.
- Add in potatoes and stock; bring to boil.
- Reduce heat, cover and simmer for 15 min.
- Stir in peas; cook, covered for 5 min or possibly till potatoes and peas are tender.
- Stir in parsley or possibly coriander if using
- Serves 4
