Maryland Tomato Dish
- Firm green tomatoes
- Flour
- Salt and pepper, to taste
- Hot melted butter
- 1 can tomatoes
- Instant minced onion
- Brown sugar
- Cut firm green tomatoes into 1/2-inch slices.
- Dip slices into flour mixed with salt and pepper, coating slices on all sides.
- Fry slices in hot butter until browned on only one side.
- Fill shallow baking dish half full of canned tomatoes; place fried tomato slices on top.
- Sprinkle with salt, pepper and a little instant minced onion.
- Put 1 tsp.
- dark brown sugar on each slice.
- Bake in pre-heated 400F oven until dark brown, approximately 20 minutes.
