Curried Potato Pastie
- 1 packages Ready-made Puff pastry
- 300 grams Potatoes
- 100 grams Frozen peas
- 2 tsp Oil
- 1 Onion
- 2 tsp Curry paste (any)
- 1 tsp Mustard seeds
- 1/4 Lemon (juiced)
- 1 bunch Coriander
- 1 Egg (for egg wash)
- Heat a large pan of water TIP.Heat the water in a kettle first then heat it Add the potatoes and cook for 8mins until just soft.
- Add the peas in the pan just before the end of cooking time then Drain and set aside
- In a frying pan, heat the oil and then fry the onion until soft and a little golden.
- Add the curry paste and mustard seeds and fry for a few more minutes until fragrant
- Carefully stir in the potatoes and peas, trying not to mash the potatoes.
- Mix well then add the lemon juice and coriander and leave it to cool for 10-15 mins
- Heat the oven to 200C/ fan 180C.
- Unroll the pastry.
- And roll out the dough on a floured surface 20cm by 20cm.
- Then cut them into 4 squares.
- Add the filling on to the pastry and close into packets.
- Add egg wash on to the pastry and Heat in the oven for 20 mins until puffed and golden.
- You can serve with fresh salad
