Cheesy Baked Eggplant

  1. Coat eggplant slices with dressing.
  2. Arrange eggplant slices in single layer on cookie sheet.
  3. Broil 4 to 6 inches from heat 8 minutes on each side.
  4. Place 1 layer of eggplant slices in 13x9-inch baking dish.
  5. Top with tomato slices.
  6. Evenly top with cheese and sauce.
  7. Bake at 350 degree F for 30 minutes until thoroughly heated.
  8. Garnish with fresh basil leaves or parsley sprigs, if desired.
