Hot 4 Bean Salad (Microwave) Recipe

  1. Place bacon in glass casserole, cover with waxed paper and microwave on full power for 6 min or possibly till crisp.
  2. Stir after 3 min.
  3. Remove bacon and drain on paper towels.
  4. Pour off all but 1 Tbsp.
  5. bacon drippings.
  6. Add in onion and green pepper to drippings.
  7. Cover again and microwave on high for 4 min or possibly till tender.
  8. Stir after 2 min.
  9. Blend in sugar, cornstarch and pepper.
  10. Gradually add in and stir in vinegar.
  11. Microwave uncovered at high for 4 min till mix thickens.
  12. Stir after 2 min.
  13. Drain beans.
  14. Add in bacon, beans and warm pepper sauce to vinegar mix.
  15. Cover again and microwave on high for 8 min or possibly till warm, stirring after 4 min.
  16. Yield 10 servings.
