Hot 4 Bean Salad (Microwave) Recipe
- 6 strips diced bacon
- 1/2 c. minced onion
- 1/2 c. minced green pepper
- 1/2 c. sugar
- 1 tbsp. corn starch
- 1/8 teaspoon pepper
- 3/4 c. cider vinegar
- 1 (16 ounce.) can cut green beans
- 1 (16 ounce.) can cut wax beans
- 1 (16 ounce.) can red kidney beans
- 1 (16 ounce.) can baby lima beans
- Dash of warm pepper sauce
- Place bacon in glass casserole, cover with waxed paper and microwave on full power for 6 min or possibly till crisp.
- Stir after 3 min.
- Remove bacon and drain on paper towels.
- Pour off all but 1 Tbsp.
- bacon drippings.
- Add in onion and green pepper to drippings.
- Cover again and microwave on high for 4 min or possibly till tender.
- Stir after 2 min.
- Blend in sugar, cornstarch and pepper.
- Gradually add in and stir in vinegar.
- Microwave uncovered at high for 4 min till mix thickens.
- Stir after 2 min.
- Drain beans.
- Add in bacon, beans and warm pepper sauce to vinegar mix.
- Cover again and microwave on high for 8 min or possibly till warm, stirring after 4 min.
- Yield 10 servings.
