Foil-Pack Chicken Mole Dinner

  1. Preheat oven to 400F.
  2. Combine stuffing mix and water; spoon evenly onto center of each of 6 large sheets of heavy-duty aluminum foil.
  3. Top each with 1 chicken breast, 1/2 cup corn, 1/4 cup cheese and 2 Tbsp.
  4. of the mole sauce.
  5. Bring up foil sides.
  6. Double fold top and both ends to seal each packet, leaving room for heat circulation inside.
  7. Place packets in single layer in 15x10x1-inch baking pan.
  8. Bake 30 to 35 min.
  9. or until chicken is cooked through (170F).
  10. Remove packets from oven; let stand 5 min.
  11. Place 1 packet on each of 6 dinner plates.
  12. Cut slits in foil with sharp knife to release steam before opening.
