Grainery Bread

  1. combine water, wheat berries, and millet in a saucepan.
  2. bring to a boil and cover and simmer for 5 minutes.
  3. stir in honey.
  4. cool to lukewarm.
  5. stir in yeast until dissolved and let sit for about 3 minutes.
  6. add oats, cornmeal, dry milk, wheat germ, salt, and sunflower seeds.
  7. stir.
  8. add whole wheat flour.
  9. knead for 6-8 minutes.
  10. cover with plastic wrap and a towel and let rise for 1 hour.
  11. punch down and divide in half into 2 loaf pans sprayed with cooking spray.
  12. cover and let rise for an hour.
  13. mix egg substitute and water.
  14. cut 3 diaganal slashes in top of each loaf.
  15. brush with egg wash and sprinkle with coarse salt.
  16. bake at 375 degrees for 40-45 minutes.
