Grilled BBQ Chicken with Jalapeno Slaw

  1. Heat greased grill to medium heat.
  2. Mix barbecue sauce and red pepper.
  3. Use kitchen shears or sharp knife to spatchcock chickens.
  4. (See tip.)
  5. Open chickens butterfly-style; pound to even thickness.
  6. Grill, cut sides down, 40 to 50 min.
  7. or until done (165 degrees F), turning after 20 min.
  8. and brushing with barbecue sauce mixture for the last 5 min.
  9. Mix mayo and lime juice in large bowl.
  10. Add cabbage, cilantro and jalapeno peppers; mix lightly.
  11. Serve with the chicken and Dinners.
