Double-Baked Sweet Potatoes

  1. Heat oven to 350F.
  2. Cut potatoes in half lengthwise.
  3. Scoop out centers, leaving 1/8-inch-thick shells.
  4. Mash potatoes in medium bowl.
  5. Add 1/2 cup butter, juice, sugar and ginger; beat until fluffy.
  6. Spoon into shells.
  7. Mix remaining ingredients; spoon over potatoes.
  8. Bake 20 to 25 min.
  9. or until heated through.
