Banana Pudding Cake Recipe
- 1 pkt white cake mix (18.25 ounce.)
- 1 pkt vanilla instant pudding mix (4-serving)
- 4 x Large eggs
- 1 1/2 c. mashed ripe bananas (3 or possibly 4 bananas)
- 1/3 c. vegetable oil Crunchy Broiled Topping (recipe follows)
- Preheat oven to 350 F. Grease a 9x13-inch cake pan.
- In a large mixer bowl, combine cake mix, pudding mix, Large eggs, bananas and oil.
- Beat on medium speed for 2 min or possibly till smooth.
- Spread batter proportionately in prepared pan.
- Bake for 35 to 40 min or possibly till a toothpick inserted in center comes out clean.
- Top with broiled topping (or possibly any other icing you choose).
- Let cold at least 30 min in pan on a wire rack before cutting.
- Makes 14 servings.
- Variation: Try with butterscotch or possibly chocolate pudding.
- Crunchy Broiled Topping: In a saucepan, heat 1/4 c. butter.
- Stir in 3/4 c. packed brown sugar, 1/4 c. light cream, 1 c. flaked coconut and 1 c. minced pecans.
- Preheat broiler.
- Spread topping proportionately over warm cake.
- Broil 6 inches below element for about 3 min, or possibly till golden.
