Banana Pudding Cake Recipe

  1. Preheat oven to 350 F. Grease a 9x13-inch cake pan.
  2. In a large mixer bowl, combine cake mix, pudding mix, Large eggs, bananas and oil.
  3. Beat on medium speed for 2 min or possibly till smooth.
  4. Spread batter proportionately in prepared pan.
  5. Bake for 35 to 40 min or possibly till a toothpick inserted in center comes out clean.
  6. Top with broiled topping (or possibly any other icing you choose).
  7. Let cold at least 30 min in pan on a wire rack before cutting.
  8. Makes 14 servings.
  9. Variation: Try with butterscotch or possibly chocolate pudding.
  10. Crunchy Broiled Topping: In a saucepan, heat 1/4 c. butter.
  11. Stir in 3/4 c. packed brown sugar, 1/4 c. light cream, 1 c. flaked coconut and 1 c. minced pecans.
  12. Preheat broiler.
  13. Spread topping proportionately over warm cake.
  14. Broil 6 inches below element for about 3 min, or possibly till golden.
