Baingan Burger

  1. Heat oven to 425 degrees F.
  2. Place eggplant on parchment-covered baking sheet.
  3. Mix vinaigrette and seasonings; brush half evenly onto eggplant.
  4. Bake 15 min.
  5. or until tender, topping with Kraft Singles for the last 2 min.
  6. Meanwhile, toss lettuce with remaining vinaigrette mixture.
  7. Spread bottom halves of buns with Miracle Whip, then spread top halves with chutney.
  8. Fill with lettuce, tomatoes, eggplant and onions.
