Baingan Burger
- 1 eggplant, cut crosswise into 8 slices Safeway 1 ea For $1.28 thru 02/09
- 1/4 cup Kraft Extra Virgin Olive Oil Aged Balsamic Vinaigrette Dressing
- 1 tsp. each garam masala, ground coriander and ground cumin
- 1/2 tsp. red chili powder or cayenne pepper
- 4 Kraft Singles Light Cheese Slices Target 2 For $5.00 thru 02/06
- 2 large leaf lettuce leaves, torn into bite-size pieces
- 4 whole wheat hamburger buns, toasted
- 1/4 cup Miracle Whip Calorie-Wise Spread
- 2 Tbsp. green chutney
- 1 tomato, cut into 4 slices
- 1/4 cup thinly sliced red onions
- Heat oven to 425 degrees F.
- Place eggplant on parchment-covered baking sheet.
- Mix vinaigrette and seasonings; brush half evenly onto eggplant.
- Bake 15 min.
- or until tender, topping with Kraft Singles for the last 2 min.
- Meanwhile, toss lettuce with remaining vinaigrette mixture.
- Spread bottom halves of buns with Miracle Whip, then spread top halves with chutney.
- Fill with lettuce, tomatoes, eggplant and onions.
