Creamy Rice Pudding and Fruit Layered Dessert

  1. Place fruit in 2-qt.
  2. decorative glass bowl; refrigerate until ready to use.
  3. Bring 1/3 cup of the water to boil in small saucepan; pour into large glass measuring cup.
  4. Stir in dry gelatin mix 2 min.
  5. or until dissolved.
  6. Add enough cold water to measuring cup to measure 1 cup.
  7. Pour over fruit; keep refrigerated.
  8. Meanwhile, place remaining 2 cups water and rice in medium saucepan.
  9. Bring to boil on medium heat; cover.
  10. Reduce heat to low; simmer 20 min.
  11. or until water is absorbed and rice is tender.
  12. Stir in milk and sugar; cook on medium-low heat 5 min.
  13. or until creamy, stirring constantly.
  14. Cool completely.
  15. Gently stir in whipped topping.
  16. Spoon rice pudding over fruit.
  17. Garnish with additional fruit, if desired.
