Cream Of Broccoli Soup

  1. Cook broccoli in salted water. Drain, reserving liquid.
  2. Melt butter. Add onion and cook until soft (transparent but do not brown).
  3. Blend in flour. Add broth and cook, stirring constantly, until mixture comes to a boil.
  4. Stir in 1 1/2 cups reserved liquid (adding water if necessary to make 1 1/2 cups).
  5. Add cream, Worcestershire sauce and salt. Add broccoli.
  6. Heat to boiling. Stir in cheese.
  7. Serve sprinkled with chopped chives or parsley. Makes about 2 quarts.
