Cream Of Broccoli Soup
- 1 medium head broccoli, cut into tiny flowerets
- 1/2 c. butter or margarine
- 2/3 c. chopped onion (2 medium)
- 2 Tbsp. flour
- 3 c. chicken broth (bouillon may be used)
- 3 c. half and half cream
- 1/2 tsp. Worcestershire sauce
- 3/4 tsp. salt
- 1 c. grated Cheddar cheese
- Cook broccoli in salted water. Drain, reserving liquid.
- Melt butter. Add onion and cook until soft (transparent but do not brown).
- Blend in flour. Add broth and cook, stirring constantly, until mixture comes to a boil.
- Stir in 1 1/2 cups reserved liquid (adding water if necessary to make 1 1/2 cups).
- Add cream, Worcestershire sauce and salt. Add broccoli.
- Heat to boiling. Stir in cheese.
- Serve sprinkled with chopped chives or parsley. Makes about 2 quarts.
