Lovage Soup with Barley
- 500 millilitres water
- 1 each chicken wings
- 100 grams chicken tenders
- 4 each juniper berries crushed
- 1/2 each celery stalks celeriac stem
- 4 each parsley stems
- 3 each dill weed stems
- 2 each sorrel stems
- 1 tablespoon pearl barley heaping
- 2 tablespoons lovage chopped finely
- 1 small onions chopped finely
- 2 each garlic cloves sliced
- 20 grams carrots sliced
- 1 each potatoes diced
- 1 pinch turmeric
- 1 x salt and black pepper ground
- 1 x parsley leaves chopped finely, for garnish
- 1 - Pour water into a pot.
- Add chicken wing, juniper and stems, bring to boil and simmer for 15 minutes.
- Remove stems.
- 2 - Add chicken tenderloins, lovage, onion, garlic, carrot, potato, and 1/2 teaspoon of salt.
- Simmer for 15 minutes.
- 3 - Remove chicken wing and chicken tenderloins.
- Cut the last into slices.
- Add a pinch of turmeric.
- Adjust salt and add some pepper.
- 4 - Garnish with parsley leaves, lovage leaves, and chicken slices.
- Comment.
- If you use dried lovage, the soup will lose most of the basic flavor.
