Peas with Bacon, Garlic and Parsley

  1. Saute bacon in heavy large skillet over medium-high heat until brown and crisp.
  2. Using slotted spoon, transfer bacon to paper towels and drain.
  3. Discard all but 2 tablespoons drippings from skillet.
  4. Add garlic to skillet; saute until fragrant, about 30 seconds.
  5. Add peas and butter to skillet.
  6. Saut until heated through, about 5 minutes.
  7. Mix in bacon; season with salt and pepper.
  8. Transfer to dish; sprinkle with parsley.
