Rajama Palak Dal Curry AKa Kidney Bean, Spinach, Lentil Cuury
- 2 tablespoons canola oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 green chili pepper, minced, I remove the seeds
- 14 teaspoon turmeric
- 14 teaspoon cumin, ground
- 14 teaspoon coriander, ground
- 12 teaspoon salt
- 14 teaspoon garam masala
- 1 teaspoon ginger paste
- 1 (14 ounce) can red kidney beans, drained and rinsed
- 1 (14 ounce) can lentils, drained and rinsed
- 10 ounces frozen chopped spinach, thawed, drained and squeezed dry
- 6 ounces tomato paste
- Heat oil in skillet and add onion and garlic.
- Cook until transparent about 5 minutes.
- Add chopped chili.
- Stir in cumin, coriander, tumeric, salt and garam marsala.
- Cook for about 2 minutes.
- Add ginger paste and tomato paste.
- Add the kidney beans and lentils and spinach.
- Cook for 2 minutes.
- Pour in 3/4 cup water.
- Cover pan and cover for 5 minutes over low heat,.
