Pulled Pork Chimichangas

  1. Heat a large frying pan with the canola oil while you prepare the chimichangas.
  2. Spoon 1/2 cup of pulled pork down the center of each tortilla.
  3. Top with 1/4 of rice.
  4. Next top with some corn and 1/2 c of the shredded cheese.
  5. Fold the tortilla like you would a burrito.
  6. Fry the seam side down first until golden then flip and fry the other side.
  7. Enjoy!
