Pulled Pork Chimichangas
- 2 1/2 cup left over pulled pork or store bought pulled pork (like lloyds brand)
- 1 1/4 cup white or brown rice,cooked
- 1 cup canned corn (or frozen defrosted)
- 2 1/2 cup shredded cheddar
- 5 burrito sized tortillas
- 2 tbsp canola oil
- Heat a large frying pan with the canola oil while you prepare the chimichangas.
- Spoon 1/2 cup of pulled pork down the center of each tortilla.
- Top with 1/4 of rice.
- Next top with some corn and 1/2 c of the shredded cheese.
- Fold the tortilla like you would a burrito.
- Fry the seam side down first until golden then flip and fry the other side.
- Enjoy!
