One Cup Casserole
- 1 cup of leftover chopped cooked chicken or 1 cup taco meat
- 1 cup small dry pasta
- 1 cup grated zucchini
- 12 cup cottage cheese
- 12 cup shredded cheese
- 1 cup water
- 1 teaspoon dried chives
- 1 tablespoon chicken base
- Heat the water, boullion and chive to boiling.
- Meanwhile mix the first 5 ingredients in an ovenproof dish.
- I use a round caserole with a lid.
- Once the boullion is disolved pour over the meat macaroni mix.
- Bake in 350 oven for one hour.
- This can be flavored many ways like by adding chile, olives or by hiding more veggies in it.
