Creamy Ranch-Chicken Casserole
- 1 green pepper, chopped
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1 Tbsp. oil
- 2 cups chopped cooked chicken
- 1 can (10 fl oz/284 mL) condensed cream of chicken soup
- 1-1/4 cups undrained canned chili-style diced tomatoes
- 1/2 cup Kraft Rancher's Choice Dressing
- 1 tsp. chili powder
- 1-1/2 cups Kraft Shredded Marble Cheddar Cheese
- 12 small corn tortillas, cut into strips
- 1/4 cup coarsely crushed tortilla chips
- 2 Tbsp. chopped fresh cilantro
- Heat oven to 350F.
- Cook vegetables in hot oil in large skillet 5 min.
- or until crisp-tender, stirring frequently.
- Remove from heat.
- Stir in chicken, soup, tomatoes, dressing and chili powder.
- Spread 1/3 of the tortilla strips onto bottom of 13x9-inch baking dish sprayed with cooking spray; cover with layers of 1/3 each of the chicken mixture and cheese.
- Repeat layers twice.
- Bake 30 min.
- or until heated through.
- Top with crushed chips and cilantro.
