Spicy Couscous Pockets (Microwave)

  1. Place reserved tomato juice in a 4-cup measure.
  2. Add enough water to measure 2/3 cup.
  3. Microwave on HIGH (100%) power setting until boiling, 1-1/2 to 2 minutes.
  4. Add couscous, chili powder, cumin and oregano and mix well.
  5. Cover and set aside.
  6. Combine beef, onion, green pepper and garlic in 3-quart casserole.
  7. Microwave on HIGH until beef is no longer pink, 5-7 minutes, stirring once.
  8. Drain.
  9. Add couscous mixture, tomatoes, raisins, salt & pepper.
  10. Mix well.
  11. Microwave on HIGH until hot, 7-9 minutes.
  12. Let stand 10 minutes.
  13. Spoon beef mixture into warmed pita pockets.
  14. Stir parsley into yogurt.
  15. Top each pita with yogurt mixture.
