Spicy Couscous Pockets (Microwave)
- 1 (16 ounce) can whole tomatoes, drained (reserve juice)
- 12 cup couscous
- 1 12 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano leaves
- 1 lb lean ground beef
- 1 large onion, chopped
- 14 cup green pepper, chopped
- 1 garlic clove, minced
- 1 cup raisins
- 34 teaspoon salt
- 14 teaspoon pepper
- 12 mini pita pockets, whole wheat
- 14 cup fresh parsley, snipped
- 1 pint plain yogurt
- Place reserved tomato juice in a 4-cup measure.
- Add enough water to measure 2/3 cup.
- Microwave on HIGH (100%) power setting until boiling, 1-1/2 to 2 minutes.
- Add couscous, chili powder, cumin and oregano and mix well.
- Cover and set aside.
- Combine beef, onion, green pepper and garlic in 3-quart casserole.
- Microwave on HIGH until beef is no longer pink, 5-7 minutes, stirring once.
- Drain.
- Add couscous mixture, tomatoes, raisins, salt & pepper.
- Mix well.
- Microwave on HIGH until hot, 7-9 minutes.
- Let stand 10 minutes.
- Spoon beef mixture into warmed pita pockets.
- Stir parsley into yogurt.
- Top each pita with yogurt mixture.
